Some smells hit our brains and trigger instant memories! The smell of coffee, bacon, onions or chocolate chip cookies. What smells do you love and what memories do they bring to you?
Chocolate chip cookies baked on a rainy day are a favorite in our family. There’s nothing better than a chocolate chip cookie coming out of the oven; warm, melting chips and soft to the bite. Now add a glass of milk or a cup of coffee, whichever is your preference, and it’s simply the best few minutes of your day! It makes the rainy clouds go away.
It took many years to perfect making chocolate chip cookies. Our families’ preference is soft cookies. I’ve had recipes to try to make the cookies soft with pudding, margarine, white sugar but not brown sugar, yet to my dismay, the consistency is not there. Along the process I’ve questioned things like; is the butter to be melted, or at room temperature, are the eggs to be room temperature and what about the types of sugars? I’ve experienced cookies that bake flat, some that turn rock hard and those that don’t spread out at all and stay in a ball. Very frustrating as the baker!
Several years ago, my dear friend Angela gave me her recipe, I thought ‘hmm, what can be any different from the ones I’ve tried in the past? Why not give this one a try?’ To my excitement, weird things excite me, the cookies turned out beautiful!! I don’t know if that is a good description for cookies, but they turned out perfect. The batter mixed up well, they dropped so nicely on the pan, baked perfectly and tasted the BEST.
The ingredients are the same as most other chocolate chip cookie recipe. Yet, I believe it is the order in which the ingredients are mixed. Don’t ask me why? I just do it the same each time and tahdah, the perfect chocolate chip cookie!
I want to share the recipe with you, the full batch and half batch measurements. To make the full batch you truly need a good mixer because it is a huge batch. One of my favorite things to do is make the full batch, then take half of it and put it in a freezer. This is for another rainy day when you may not have as much time to bake.
Chocolate Chip Cookies
Full Batch Half Batch
1 1/3 c butter ½ c +3 Tbsp
4 eggs 2 eggs
2 c brown sugar 1 c brown sugar
1 c white sugar ½ c white sugar
4 tsp vanilla 2 tsp vanilla
Beat all ingredients together until fluffy. Then add following ingredients:
5 c flour 2 ½ c flour
2 tsp baking soda 1 tsp baking soda
2 tsp salt 1 tsp salt
2 (12 oz) bags chocolate chips 1 (12 oz) bag chocolate chips
Bake @ 350 degrees for 12 minutes.
